Smoked Paprika-Spiced Pork Chops with Sautéed Spinach

Ingredients
- 4 bone-in pork chops (1 inch thick - about 2 1/2 pounds total
- 1 tablespoon olive oil
- 2 teaspoon smokey paprika
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon black pepper
- 4 scallions (sliced)
- 1 medium clove of garlic
- 1 10-ounce package spinach (thick stems removed)
- 1 tablespoon fresh lemon juice
Directions
- Step 1 Mix 1/2 teaspoon salt and 1/4 teaspoon black pepper with the paprika.
- Step 2 Coat chops with spices in a large bowl. Cover and refrigerate for 1 hour
- Step 3 Pre-heat oven to 400 degrees. Heat the oil in a large skillet over medium-high heat. Cook chops until brown – about 2 to 3 minutes per side.
- Step 4 Transfer chops to a rimmed baking sheet and cook for 10 to 12 minutes
- Step 5 Return skillet to medium heat, add garlic and scallions. Cook for about 3 minutes – stirring continuously.
- Step 6 Add spinach and 1/4 teaspoon of salt and 1/4 teaspoon black pepper. Cook, tossing until just wilted (1 to 2 minutes). Stir in lemon juice. Serve with chops.

Quick Tip:
Fresh is best. Never use concentrated lemon juice.
