Chili-Glazed Pork Roast

Ingredients
- 1 tablespoon packed brown sugar
- 1 tablespoon snippet fresh thyme
- 1 teaspoon chili powder
- 1 teaspoon snipped fresh rosemary
- 1/4 teaspoon kosher salt
- 1/2 tablespoon olive oil
- 1/8 teaspoon cayenne pepper
- 1 2 to 21/2 pound boneless pork top loin roast
Directions
- Step 1 In a small bowl, combine brown sugar, thyme, chili powder,rosemary, olive oil, and salt.
- Step 2 Pour mixture over pork loin and coat completely – rub in with fingers. Refrigerate meat, covered, for 2 to 4 hours
- Step 3 After marinating, Preheat oven to 325 degrees.
- Step 4 Place roast on a rack in a shallow roasting pan. Insert a meat thermometer into center of roast. Roast for 1 1/4 to 1 1/2 hours or until thermometer registers 155 degrees.
- Step 5 Cover roast with foil and let stand for 15 minutes.
- Step 6 Pour pan drippings on top of roast.
