  • 21/2 lbs. cut up chicken pieces - skin removed
  • 1/2 cup Dijon-style mustard
  • 1 tablespoon snipped fresh thyme or 1 teaspoon dried thyme, crushed

Ingredients
  • 4 slices bacon, thick-cut
  • 3 tablespoons butter, unsalted
  • 2 large russet potatoes, baked, peeled and cut into 1-inch cubes
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 large Fuji apple, peeled, cored and diced
  • 3/4 teaspoon maple seasoning
  • 1/4 teaspoon cinnamon, (optional)
  • Kosher salt and freshly ground black pepper
Directions
  • Step 1 Cook bacon in large skillet over medium heat until crisp and browned, about 10 minutes.
  • Step 2 Drain on paper towels.
  • Step 3 Reserve the bacon fat – about 4 tbsps.
  • Step 4 Heat butter and 2 tbsps of bacon fat in a medium nonstick skillet over medium heat.
  • Step 5 Add potato, onion, garlic, and apple and cook until lightly browned, about 10 minutes.
  • Step 6 Remove from heat and stir in the 1 tablespoon of organic maple syrup and 1/2 teaspoon of cinnamon.
  • Step 7 Season with salt and pepper.
  • Step 8 Serve warm.
