Ingredients
  • 1 pair of rubber gloves (see Quick Tips below)
  • 1 Mango (peeled, seeded and chopped)
  • 1 medium red sweet peper
  • 1/4 cup thinly sliced green onions (scallions)
  • 1 small jalapeno pepper
  • 2 tablespoons olive oil
  • 1 tablespoon rive vinegar
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon finely shredded lime peel
  • 2 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Directions
  • Step 1 In a medium mixing bowl, combine 1 mango peeled, seeded, and chopped (about 1 1/2 cups). 1 medium red sweet pepper, seeded and finely chopped. 1/4 cup thinly sliced green onions (also referred to as scallions). 1 small jalapeno pepper, seeded and finely chopped. 2 tablespoons olive oil. 1 tablespoon rice vinegar. 1/2 teaspoon finely shredded lime peel. 2 tablespoon lime juice. 1/4 teaspoon salt and 1/4 teaspoon black pepper. Yields about 2 cups.

Q U I C K  T I P S:
Because jalapeno peppers contain that can burn your skin and volatile oils  that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with jalapeno peppers, wear rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.
