Apple Bacon Hash

Ingredients
- 4 slices bacon, thick-cut
- 3 tablespoons butter, unsalted
- 2 large russet potatoes, baked, peeled and cut into 1-inch cubes
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 large Fuji apple, peeled, cored and diced
- 3/4 teaspoon maple seasoning
- 1/4 teaspoon cinnamon, (optional)
- Kosher salt and freshly ground black pepper
Directions
- Step 1 Cook bacon in large skillet over medium heat until crisp and browned, about 10 minutes.
- Step 2 Drain on paper towels.
- Step 3 Reserve the bacon fat – about 4 tbsps.
- Step 4 Heat butter and 2 tbsps of bacon fat in a medium nonstick skillet over medium heat.
- Step 5 Add potato, onion, garlic, and apple and cook until lightly browned, about 10 minutes.
- Step 6 Remove from heat and stir in the 1 tablespoon of organic maple syrup and 1/2 teaspoon of cinnamon.
- Step 7 Season with salt and pepper.
- Step 8 Serve warm.
