Ingredients
  • 1/4 scallions (green onions) thinly sliced
  • 3 tablespoon rice wine vinegar
  • 1 garlic clove, minced
  • 1 tablespoon lime juice
  • 1 medium cucumber, peeled, seeded and diced (about 3/4 inch pieces)
  • 1/2 teaspoon mayonnaise
  • 3 tablespoons extra-virgin olive oil
  • 3 avocados, halved, pitted, and cut into about 3/4 inch pieces
  • 12 ounces cherry tomatoes (quartered)
  • 1/2 cup chopped fresh basil
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon kosher salt
  • 4 ounces of shaved smoked Gouda
Directions
  • Step 1 Whisk vinegar, garlic, mayonnaise, 1/4 teaspoon kosher salt, and 1/4 teaspoon ground black pepper in a medium size bowl until mixture is milky with lumps. Whisk constantly and slowly drizzle in oil. Dressing will begin to appear silky and slightly thickened.
  • Step 2 Gently toss avocados, 2 tablespoons dressing, and 1/2 teaspoon salt together in different bowl. Transfer avocados to a large serving platter  and or onto individual serving plates.
  • Step 3 Toss tomatoes, basil, cucumbers, lime juice and scallions with remaining dressing.
  • Step 4 Spoon tomato mixture  over avocados and sprinkle with shaved Gouda
  • Step 5 Enjoy!

Quick Tips:

Never use concentrated juice. Fresh is always best.

Alternative serving option: Place avocados onto a bed of Bibb lettuce, then top with tomato mixture.

Avoiding tossing avocados with tomato mixture. The avocado will coat the other ingredients resulting in am army-green film.
